Spinach Salad

Ingredients
500g Vitacress red spinach • 1 tablespoon dried apricots • 1 tablespoon prunes • 1 tablespoon dried cranberries • 1 tablespoon pistachio nuts, shelled • 100g mushrooms (chanterelle for example) • 1 tablespoon olive oil • Pepper and salt • 200g goat’s cheese with wild blueberries i.e. Wensleydale
Method
Wash the spinach, arrange on a plate, and drizzle with some olive oil • Cut the cheese into small cubes - or alternatively festive stars - and add to the spinach • Chop the dried fruit and mushrooms and sauté in a hot frying pan without any fat or oil • Place the heated ingredients in a bowl, add a tablespoon of olive oil and mix together • Add to the salad leaves and cheese and sprinkle with salt and freshly ground pepper
