Dried Squid Shreds with Water Melon and Quarteira Sea Shrimp
Ingredients
Squid • Fresh shrimps • Water melon • Thyme • Olive oil • Garlic • Salt • Bay leaf
Method
Open the squid and clean in brine • Dry in the sun for three days • Shred the squid into long, fine slices • Keep to one side • Shrimps: Shell the shrimps and season with salt • Sauté the shrimps in a little olive oil, crushed garlic and the bay leaf • Season with fresh thyme • Spaghetti: Cut the water melon • Liquidise the slices • Pass the liquidised melon through a paper filter • Keep the liquid to one side and mix in sodium alginate • Make the spaghetti with a syringe in water with calcium chloride • Dry on kitchen paper Presentation: Place the water melon spaghetti in the centre of the plate together with the sautéed shrimps • Arrange the slices of dried squid around it and sprinkle with fresh thyme leaves
