Caramelised Loin of Wild Boar with Orange and Lime Rice
Method
Make a marinade with the red wine, garlic, bay leaf, winter savoury and basil • Marinate the meat for two days • Remove the boar loin from the marinade and dry with kitchen towel • Brown the loin in a frying pan with a little olive oil and two cloves of garlic • Put to one side • Clean the pan and add a little olive oil, and two garlic cloves • Add the marinade and reduce slightly • Add the meat and leave to stew in this sauce • Remove the loin and cut into thin slices • Season with flor de sal and keep for later • Pour some honey in a saucepan and bring to the boil • Add the slices of meat • Cook the rice in salted water, with a dash of olive oil and two cloves of garlic • Cut the orange and lime peel into very thin strips • And chop very finely • Crush some raspberries with a spoon and keep a little of the juice • Serving fan out the fine slices of loin on the plate • Place the rice mixed with the orange and lemon peel pieces into a form • Add a sprig of thyme • Decorate with the raspberry juice
