Ingredients
• 1kg sirloin
• 3 large onions
• 100g grated ‘Queijo da Ilha’ cheese
• 1 jar Mexican salsa
• 300g long grain rice
• 1 small sprig coriander
• Salt
For the marinade:
• Juice of 1 lime
• 1 tsp Herbes de Provence
• 1 tsp powder garlic
• 1 tbsp Worcestershire sauce
• 1 tbsp soy sauce
• 1 Mexican beer
• Black pepper to taste
Method
Cut the meat into strips and marinate for one hour • Cook the rice with the coriander, 1 chopped onion, salt and oil • Grill the meat and reserve • Finely slice the remaining onions and lightly fry in oil • In a baking dish, place the rice, meat strips and onion in alternate layers • Cover with the Mexican salsa and finally the grated cheese • Bake in the over until the cheese is melted and browned • Serve with salad, sour cream and guacamole
