Irish Stew

Ingredients
1kg diced lamb (a mix of leg & neck is the best) • 300g carrots •
300g onions • Sprig of thyme • Salt & pepper to taste •
Water to cover • 1.5kg peeled potatoes
Method
Wash the diced lamb to remove extra juice • Place the lamb and thyme in a large pan and cover with the cold water • Add the carrot and onion cut into large pieces • Season with salt and pepper • Bring to a simmer • Skim to remove any foam that comes to the surface • Simmer for 20 minutes • Add the peeled potatoes in medium sized pieces • Cook for a further 30 minutes and taste • Correct the seasoning • Remove the thyme and most of the potato • Simmer for a further 20 minutes until the last bits of potato break up and thicken the juice a little • Return the potatoes and heat • Serve with fresh Irish soda bread
