Chicken & Pepper Fajitas

Ingredients

500g chicken breast • 1 Old El Paso spice blend for burritos/fajitas • 1 pk Old El Paso tortillas (8) • 1 Old El Paso original salsa • 2 red peppers • 1 large onion • 3 tbsp olive oil • 1 red chilli pepper • 1 bunch coriander

Method

Cut the onions into semicircles and the peppers into strips • Cook over a high heat in olive oil and the chilli pepper • Add the chicken cut into strips and stirring continuously cook for a further 4 to 5 minutes • Add the powdered spice blend, stirring continuously for a further 3 minutes without covering the pan • Finally add the chopped coriander • Heat the tortillas in a hot oven for between 60 and 90 seconds, and arrange as shown in the picture • You can also cover with Manchego or Cheddar cheese and heat for a while in the oven

NB:
alternatively, you can buy kits containing the spices, the spicy sauce to serve separately and the tortillas • Ignore what it says on the pack, as 4 minutes at 180ºC is clearly too long and will destroy the tortillas
