Roast Vegetable Bundles with Chestnuts

Ingredients
6 parsnips cut into thick batons • 6 carrots cut into thick batons • 2 handfuls of peeled chestnuts • 1tablespoon maple syrup • 1 tablespoon balsamic vinegar • 1small bunch of thyme • 8 thin slices bacon • Olive oil
Method
Preheat the oven to 200°C • Simmer the prepped vegetables until they are just “al dente”, i.e. about 5 minutes • Drain the cooked vegetables and toss in a pan over a low heat, adding a dash of maple syrup and balsamic vinegar until glazed and caramelized • Season to taste • Form the glazed vegetables into bundles, omitting the chestnuts • Add a sprig of thyme to each bundle and wrap with bacon • Place the bundles onto a baking tray, along with the chestnuts, brush with oil and roast for about 20 minute
