Ingredients

3 tablespoons olive oil • 100g diced bacon • 1 whole chicken, approx 1 kilo • Salt and pepper • 2 tablespoons lemon juice • 250g small onions, peeled • 2 large cloves of garlic, chopped in half • 4 small carrots cut into small cubes • 450g small new potatoes (Vitacress) • 4 twigs of fresh thyme • 100ml chicken stock

Method

Fry the bacon in a hot pan until crispy • Remove the bacon and place to one side • In the same oil fry the chicken on all sides until the skin is brown and crusty • Add salt and pepper • Drizzle lemon juice over the chicken, and continue cooking the chicken, covering the pan with a lid, for approx 40 minutes on a low heat, turning now and then • Peel the onions and cut in half • Peel the garlic and cut into thin slices • Clean the carrots and cut in small pieces • When the 40 minutes are up, add the cooked bacon, carrots, potatoes, garlic, onions and the thyme to the chicken • Mix everything and add the chicken stock • Then simmer for another 20-30 minutes with the lid half on the pan, cooking slowly until everything is well cooked
