Parsnips & Apple

Ingredients

500g parsnips • 20ml olive oil • 1 Granny Smith apple • Juice of ½ lemon • 1 sprig thyme •
1 tsp ground fennel • Salt and freshly milled pepper to taste • 4 tbs of cream

Method

Peel the parsnips as you would carrots • Finely slice and save, peeling the apple and cutting into fine strips • Heat the olive oil and add the parsnips, mixing and seasoning with the spices, salt and pepper • Add the apple and the lemon juice and leave to stew gently for 8 to 10 minutes; if the liquid quickly evaporates add some tablespoons of water • Add the cream and boil until fully mixed and serve while still creamy • The cooking time depends on the texture of the parsnips
