Stewed Swede

Ingredients

1 swede (approx. 1 to 1.2kg) • 50g butter • 50g sugar • 2 tsp Margão Art Tandoori Spices •
200ml chicken stock • Salt and freshly milled pepper to taste

Method

Peel the swede as you would a large turnip • Be careful as the texture of the swede is very tough making it advisable to peel the vegetable on a cutting board • Cut the swede into slices about 1cm thick and the cube to the same thickness • Heat the butter and add the swede, seasoning with the sugar, salt, pepper and the spices, mixing well • Add the stock and leave to stew for 15 to 20 minutes, according to the relative texture of the root • Serve when there is no liquid left
