Baked pumpkin with Honey

Ingredients

2 garlic cloves • ½ cup honey • 1 tsp curry powder • 3 tbsp soy sauce • 2 tsp grated fresh ginger • 1 kg pumpkin • 1 portion honey marinade • 20g salt • 20ml olive oil • 4 sheets of aluminium foil


 

Method

Heat the honey and add the chopped garlic, the soy sauce, the curry and the grated ginger • Mix well and leave to cool • Coat the meat to be marinated well and leave to rest for 1 to 2 hours • Grill the meat over hot coals, brushing with the remaining marinade • Cut the pumpkin into four regular pieces, cutting off the skin and removing the seeds • Marinate the pumpkin pieces in the honey marinade for two hours, and keep a little of the marinade for later • Wrap up the pumpkin pieces in the aluminium foil after seasoning with salt and drizzling with olive oil • Place in the oven (medium) and bake for 15 to 20 minutes • Add the remainder of the marinade when you serve
