Ingredients

2 large cucumbers • 2 tbsp Phoenicia fresh cheese (250g) • 1 tub Milram natural yoghurt • ½ pack of Vitacress mint leaves (30g) • 1 tsp salt

Method

Peel the cucumbers and grate the flesh into a bowl, stopping before you reach the seeds - you only want the firm flesh • Season with the salt and mix, before leaving to rest for 30 minutes • Drain and rinse under water, before draining again and squeezing • Coat in the fresh cheese and yoghurt and mix in the chopped mint leaves • Serve well chilled
