Summer Style Ravioli

Ingredients
1 pack aubergine & courgette ravioli • 1 Sheep’s Cheese - Herdade da Maia • 50 ml olive oil - Terras de Portugal • Flor de Sal - Maria do Monte • 1 Baby Romanesco • 6 green and 6 yellow baby organic courgettes • 1 punnet cherry tomatoes • 1 Italian Spice Mix - Nomu • 100g Pine nuts
Method
Cook the ravioli for 3 minutes in salted boiling water • Cut the romanesco into small pieces and the courgette into small slices and roast them slowly in a non-stick pan with a little olive oil • Sautee the tomatoes later in the same pan • Arrange the ravioli and vegetables on a plate • Sprinkle with the roasted pine nuts, drizzle with olive oil; sprinkle with the spice mix; sprinkle the vegetables with flor de sal gourmet salt, and finally sprinkle with the grated sheep’s cheese
