Cheese & Potato Cakes

Ingredients
1 avocado, peeled, mashed • 1 big potato, peeled • 4 sun dried tomatoes in oil • 1 handful mixed lettuce, Vitacress • 2 sprigs of chives, for decoration • 2 slices (1 cm thick) of Gouda with green pesto cheese, from the deli counter • 1 slice of extra mature cheddar cheese, 1 cm thick • A few pine nuts, toasted, a few walnuts, cut in half • Extra virgin olive oil • Pepper, salt
Method
Peel the potato, cut off two 1-cm-thick slices and fry in a little olive oil till golden brown • Save for later • On a plate place a potato slice • Layer with a slice of green gouda cheese and a slice of the cheddar • Top with some of the mashed avocado, a few walnuts and a few sun dried tomatoes • Repeat the process until you have created a layered ‘cake’ • Finish with a few lettuce leaves and the chive sprigs • Drizzle with a little olive oil and decorate the plate with pine nuts, finely chopped sun dried tomatoes and a few drops of olive oil
