Omelette With Mushrooms

Ingredients
20g butter • 2 eggs • Salt & pepper to taste • A dash of milk • 50g mixed mushrooms (cèpes, oyster, chanterelle, morel or shiitake)
Method
Whisk the eggs with the milk and the salt and pepper • Heat butter in an omelette pan or small frying pan until hot • Add the mushrooms and fry for a few minutes • Add the whisked egg mixture, making sure the bottom of the pan is covered with the mixture • Cook on a low temperature so as to avoid burning • Wait until the centre of the mixture has congealed and flip over the omelette using a spatula • Continuing flipping until the omelette displays a creamy golden colour • Nice to serve with green salad and a glass of Herdade da Calada
