Clear Chestnut Soup

Ingredients
1 litre chicken or vegetable stock; cubes or powder made up to 1000ml • 250g fresh pre-packed ravioli, with spinach-ricotta filling • 100g chestnuts; peeled and chopped • 2 teaspoons Margão ground anise • 100g baby vegetables, such as carrots, asparagus and/or fennel • A handful of fresh herbs, finely chopped (parsley, chives, basil) • A handful of cherry tomatoes, quartered • 2 tablespoons Madeira wine • Pepper to taste
Method
Fry the chopped chestnuts in a little butter • Add the ground anise and fry on a low heat for two minutes • Bring the stock to the boil, and after 15 minutes add the chopped chestnuts • After five minutes add the vegetables, tomatoes and ravioli, and cook on a low heat for five more minutes • Just before serving add the fresh herbs, pepper and Madeira wine
