Panna Cotta

Ingredients
8 125-ml individual pudding moulds or teacups • 3 ½ sheets of gelatine • 600ml single cream • 110g caster sugar • 6 tablespoons rose water • Some edible flowers for decoration
Method
Place the gelatine sheets in a bowl of cold water and set aside for 5 minutes to soak • Empty the cream into a saucepan with 110g of the sugar, and heat over a low flame for 5 minutes, stirring to dissolve the sugar • Squeeze the gelatine (to remove the water) and add to the cream • Continue stirring over a low heat until the gelatine has dissolved • Add 6 tablespoons of rosewater • Pour into the moulds and allow them to cool to room temperature, then refrigerate for 4 hours to set • Meanwhile decorate plates with flowers • Place the bottom of the panna cotta moulds briefly in warm water then turn out on to the plates
