St Valentine’s Cake

Ingredients

150g unsalted butter • 150g flour • 150g muscovado sugar • 5 eggs • 25g crystallized ginger in small cubes • 2 tbsp Grand Marnier • Zest and juice of 1 lemon • 150g pine nuts • 150g walnuts • 100g candied red cherries • 1 tsp ground cinnamon • 1 tsp spice mix

Method

Preheat the oven to 160ºC • Mix all the nuts and dried fruits with the ginger, the Grand Marnier, the lemon juice and zest • Mix the flour with the spices • Mix the butter with the dark brown sugar and add the eggs one by one, mixing continuously • Add the flour/spice mix to this mixture, blending well and the mix of nuts and fruits, saving a few to decorate the cake’s surface • Butter the cake tin and dust with flour and pour in the cake mixture • Bake for 20 to 25 minutes • Remove from the oven and from the tin when lukewarm • Serve
