Chocolate Fondant

Ingredients

5 eggs • 5 egg yolks • 125g golden caster sugar • 250g Green & Black’s 72% Cooks’ Chocolate (organic) • 250g unsalted butter, (a little extra for greasing the ramikins) • 50g sifted plain flour • Whipped cream, to serve

Method

Beat the eggs, yolks and sugar in a bowl, until pale • Meanwhile melt the chocolate and butter gently in a bowl set over a pan of hot water • Remove from the heat • Slowly add the chocolate to the egg mixture, whisking it until smooth, and then fold in the flour • Pour into small, greased ramikins before the mixture begins to firm up • Put in the fridge and chill overnight • Preheat oven to 180ºC. Bake for10-15 min. until centre puffs up, checking them regularly • Remove from the ramikins and serve with thick cream
