Lemon Marmalade
Ingredients
500g lemons • 400ml water • 600ml caster sugar
Method
Wash the lemons and cut into pieces • Do not remove the pips • Pour the lemon pieces into a food processor and blend • Pour the mixture into a saucepan and add the water • Bring to the boil and simmer on a low heat for 30 minutes • Add the caster sugar and stir constinously with a wooden spoon for 15 minutes • Remove from the heat and let the marmalade cool • Pour the marmalade into clean glass jars
