Lemon Curd

Ingredients

200ml caster sugar • 3 fresh eggs • 2 lemons • 50g butter

Method

Beat the eggs and the sugar together in a saucepan and add the juice of the lemons • Gently heat and simmer on a low heat • Refrain from boiling • Stir continuously with a wooden spoon until the mixture thickens (about 15 minutes) • Remove from the heat and stir in the butter • Allow the curd to cool and put in clean glass jars • Store in the fridge • Good for up to one week
