Own Very Berry Jam
Ingredients
125g Raspberries • 250g Strawberries • 125g Blueberries • 2 Fuji apples • Juice of 1 orange • Juice of 1 lemon • 1 Vanilla pod - Vahiné • 350g Jam Sugar with pectin - Tate & Lyle
Method
Peel and finely dice the apples and heat up with the sugar in a shallow pan on a low heat • Mix together the berries and add to the pan • Top up with the juices and the vanilla pod • Turn the heat up • Heat for at least 3 minutes and remove the “cooking foam” to ensure a clear jam • Pour the jam into jars and sterilize if possible at 85ºC for at least 35 minutes in a deeper tray with some water in the oven • Cool quickly
