Ice Cold Coconut Soup

Ingredients
Fresh Coconut, halved • 1 tin Koala light coconut milk • 1 fresh lemon • 125g Danone natural yoghurt • 1-2 tablespoons “Espiga” Cinnamon-Sugar Mix • 1 Vanilla pod • Daelmans filled caramel wafers • Lindt milk chocolate
Method
Ask in the supermarket for freshly cut coconuts • Blend the coconut milk, fresh lemon juice, yoghurt, cinnamon-sugar mix and vanilla (slice open, and scrape out the inside) for at least 3 minutes • Place in the freezer for around 15 minutes • Serve ice cold in the coconut shell • Sprinkle over milk chocolate shavings and serve with the caramel wafers • For an adult version try adding some Batida de Coco liqueur
