Pineapple Cakes

Ingredients

Cakes: 1 large pineapple • 70g butter • 30g flour • 2 egg whites • 30g finely ground almonds* Sauce: 8 oranges • 2 tablespoons sugar • 1 tablespoon runny honey

Method

*Place almonds in a blender until they are ground to a powder • Cut the peeled pineapple into four slices, each one centimetre thick, removing the tough inner core • Grease four small cake tins with butter and dust with flour • Place a pineapple piece in the bottom of each tin • Preheat the oven to 200ºC • Melt the butter and mix with the sieved flour • Beat the egg whites until stiff and then mix in the dry ingredients, followed by the butter-flour mixture • Divide the cake mixture between the four tins and bake for 15 minutes • In the meantime squeeze the oranges, and then heat the juice together with the honey and the sugar in a saucepan until it reduced to one third • Serve the cakes warm or cold with the orange sauce • Serve with Faustino white wine
