Crème Brûlée

Ingredients

100g crème fraîche • 60g sugar • 20g lemon juice • ½ vanilla pod • 1 egg • 1 egg yolk • 100g blackberries • 40g brown cane sugar

Method

Preheat oven to 140º C • Mix the egg yolk with half the sugar • Stir until the sugar is dissolved • Mix the crème fraîche with the rest of the sugar, the lemon juice, 1 whole egg and the beans scraped from the vanilla pod • Stir well • Blend the two mixtures together • Place the blackberries into the little bowls, pour the mixture over, and bake for approx. 15-20 minutes in the middle in the oven • Remove, allow to cool, and sprinkle with brown cane sugar • Place under a hot grill for the sugar to caramelise, or if you have one to hand, melt the sugar tops with a gas burner
