Baked Alaska

Ingredients

750g sponge cake • 100ml Grand Marnier or other liqueur • 400g red berries, such as redcurrants, raspberries etc. • 8 scoops of ice cream (vanilla, pistachio or cherry) • 6 egg whites • 50g icing sugar

Method

Make sure your ice cream is very cold • Preheat oven to 200ºC • Slice the sponge cake into 1-cm slices • Drizzle with the liqueur • Take a large plate and arrange the eight scoops of ice cream in the middle • Add the red fruit mixture • Place the cake slices on the top of the ice cream, making sure that it is fully covered • Store the plate in the freezer • Beat the egg whites adding 25g of icing sugar, until the meringue mixture forms stiff peaks • Remove the plate from the freezer and spread the meringue mixture onto the cake. Dust with the remaining icing sugar • Place in the oven for a few minutes until the meringue peaks turn golden brown • Remove from the oven, drizzle with liqueur and flambé
